Evaluation of the quality of butter, realized in the trading network «Oles» in Ekaterinburg

The article deals with the assessment of the quality of butter on organoleptic and physico-chemical para-meters. Research material is 3 samples of butter manufactured by OOO «TPK Maslodel», OAO «Maslozavod Nytvensky», OAO «UNIMILK». The study of quality of butter is determined in accordance with the requirements of GOST R 52969-2008 «Butter. Specifications». Of organoleptic characteristics are determined appearance, color, taste, smell, texture, packaging and labeling. Of physico-chemical parameters in butter are normalized acidity, mass fraction of moisture and fat. An evaluation of the quality of butter shows that all the studied samples comply by indicators with the standard.
