Comparative characteristics of juices sold in TC «Picnic»

The article considers the assessment of the quality of juice on organoleptic and physical-chemical indicators. The material for this study are 3 apple juice of trademarks «J7», «Rich», «Dlya tebya». Study of the quality of juice is determined in accordance with the requirements of GOST R 52186-2003 «Canned food. Fruit juices restored. Technical conditions». Of organoleptic characteristics are determined an appearance, transparency, taste and smell, color. Of physic-chemical parameters are defined a mass fraction of soluble dry substances, mass portion of titratable acids, pH and completeness of loading. The assessment of the quality of apple juice shows that all samples by the investigated parameters corres-pond to the requirements of the standard.
