Assessment of the quality of coffee impemented in OOO «Universam Zvezdny»

The article considers the assessment of the quality of coffee on organoleptic and physical-chemical indicators. The material for this study are 3 types of natural coffee of trademarks «Jacobs Monarch», «Chernaya karta », «Jockey». Study of the quality of coffee is determined in accordance with the requirements of GOST R 52088-2003 «Natural roasted Coffee. General technical conditions». Of organoleptic indicators are normalized appearance, color, aroma and taste. Of physico-chemical parameters are determined the net weight, mass fraction of extractives, mass fraction of moisture, mass fraction of metallomagnetic and outside impurities. Assessment of the quality of coffee beans shows that not all samples by the investigated parameters correspond to the requirements of the standard.
