The comparative characteristic and evaluation of the quality of long loafs «Moscow» of different manufacturers of Sverdlovsk area

The article considers the assessment of the quality of long loafs «Moscow» on organoleptic and physicalchemical indicators. The material for this study are 3 long loafs «Moscow» of trademarks «Rezh-hleb», «Smak», «Vseslav». Study of the quality of the bread is determined in accordance with the requirements of GOST 27844-88 «Bakery products. Technical conditions». Of organoleptic characteristics are determined appearance, form of product, surface condition of crumb, color, smell and taste. Of physico-chemical parameters in the sticks are normalized weight, moisture, acidity, porosity, width and length of the product.
