Quality assessment of margarine sold in the trading network «Monetka»

The article considers the assessment of the quality of margarine on organoleptic and physical-chemical indicators. Research material was represented by 3 samples of margarine of brands «Generous summer», «Pyshka» and «Kolobok». Quality assessment of margarine was carried out in accordance with the requirements of GOST R 52178-2003 «Margarines. General technical conditions». Оf organoleptic indicators there were defined taste, smell, color, appearance and consistency. Besides physic-chemical parameters are standardized mass fraction of moisture, acidity, fat content and the content of table salt. According to the results of quality assessment all samples of margarine by the investigated parameters correspond to the requirements of the standard.
